On the eve of World Bread Day, the Research Institute of the Baking Industry (NIIKhP) celebrated its 95th anniversary at the Russian Academy of Sciences venue.

Over its almost century-long history, the institute's scientists have made a significant contribution to the development of Russian baking, developed technologies and domestic equipment, and also created methods for product quality control and a regulatory framework.

During the event, the role of NIIKhP in ensuring food security and strengthening Russia's technological sovereignty was particularly noted.

The Importance of Bread Science for the North

The activities of NIIKhP are of strategic importance for the Arctic and hard-to-reach regions. The institute's scientists have developed specialised bread varieties – "Polyarny" (Polar) and "Arktichesky" (Arctic), using northern wild plants (cetraria, sphagnum, cranberries).

For northern territories, innovations in food storage are a matter of life support. The shelf life of supplied flour must be 2 years, which is critically important for ensuring the possibility of baking fresh bread between supply periods.

Congratulations from ZVEZDA Plant

ZVEZDA Plant joins in congratulating the NIIKhP team. The institute's scientists create technologies and recipes, and ZVEZDA Plant's all-terrain vehicles help deliver these goods to hard-to-reach areas.

We wish the employees, veterans, and young researchers of NIIKhP health, new discoveries, successful implementation of developments, and well-being!
